The National Metal and Materials Technology Center (MTEC), under the National Science and Technology Development Agency (NSTDA), led by Dr. Chaiwut Gamonpilas and the Food Materials Science (FOMT) research team, participated in the Asia IDDSI Conference 2025. At the event, the team presented “Science and Safety of IDDSI Possibilities” and highlighted cutting-edge research in food innovation aimed at improving nutrition and safety for individuals with chewing and swallowing difficulties.
At the event, the research team showcased practical innovations designed to support individuals with dysphagia, including:
- Mucilage from Sweet Basil Seeds – Developed as a natural thickening agent for food products.
- Texture-Modified Ready-to-Eat Meals – Formulated to meet IDDSI Levels 5–7, providing safe and accessible options for those with chewing and swallowing issues.
- IDDSI Flow and Fork Testers – Specialized tools created to enhance quality standards in food development and accelerate the transfer of technology to commercial applications.
